  • 2 tbsp olive oil
  • 1 medium onion, finely diced
  • 4 garlic cloves, minced
  • 2 x 400g cans chopped tomatoes
  • 1 tsp smoked paprika

  • 1 x 400g can cannellini beans, drained and rinsed
  • 1 medium courgette, finely diced
  • Salt and black pepper to taste
  • 80g breadcrumbs
  • 3 tbsp nutritional yeast
  • 100g vegan mozzarella or cheddar, grated (optional)

  1. Step 1. Preheat oven to 200Β°C (fan 180Β°C).
